Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup fresh pineapple, diced
  • 1 cup cherry tomatoes, diced
  • 1/4 cup green onions, chopped
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped

Instructions

  2. Rub the chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Place the chicken in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
  4. While the chicken is baking, prepare the pineapple salsa. In a bowl, combine the diced pineapple, cherry tomatoes, green onions, lime juice, and cilantro. Mix well.
  5. Once the chicken is done, remove it from the oven and let it rest for a few minutes.
